Autumn is upon us, and with it come plenty of traditional seasonal dishes, not least St Martin's goose. On the table, you'll find traditional kaldoun and roasted goose thighs with sauerkraut, as well as an increasing number of contemporary variations. We've put together a list of our favourite spots in Prague, where you'll be able to taste the best the season has to offer.

Ambiente is a space created formed by a shared vision of gastronomy. Here, food becomes experience, and we believe that the best ingredient in our work is joy. It's been almost 30 years since we opened our first restaurant, and we haven't stopped since then.
Come and take a look around.

Lokál

Geese will be making their way through all Lokál locations again this year, and on Tuesday, November 11th, you can look forward to the classic dish you love — roasted goose thighs with sauerkraut and dumplings. There’ll also be traditional goose soup and other St. Martin’s Day delicacies. Some Lokáls are even hosting “goose feasts” — for more details on the individual courses, follow your favourite Lokál on Instagram.

The chefs source their geese from the Czech family-owned Tům farm in Nestanice. However, there will only be a limited number of portions, so we recommend that you book in advance.

Café Savoy

Café Savoy won’t be left behind this year with its take on the St. Martin’s Day goose feast. Goose will be on the menu from November 9th to the 15th. They’ve prepared a tried-and-true classic for their guests: roast goose with two kinds of sauerkraut and dumplings. There will also be hearty goose soup with noodles. But even at Savoy, the number of servings is limited!

Kantýna

You can also head to Kantýna for this year’s St. Martin’s Day feast. Waiting for you at the serving counter will be roasted goose with a mix of dumplings and sauerkraut, hearty goose soup, goose pâté, and, of course, a sweet dessert.

Pastacaffé

From November 11th to 13th (or while supplies last), you can look forward to an Italian-Czech St. Martin’s Day special. The menu kicks off with kaldoun soup featuring homemade noodles and vegetables. For the main course, you’ll enjoy confit goose leg with cabbage and apples and raisins, served with potato pancakes, or original ravioli stuffed with goose ragù with celery purée and truffles. The sweet finale will be baked plums with a wafer and ice cream, and traditional St. Martin’s Day rolls will also be on the menu.

Pasta Fresca

Lovers of pasta and Italian cuisine shouldn’t miss the offerings at Pasta Fresca on Celetná Street. From November 11th until supplies last, the chefs will be serving their own St. Martin’s Day specials.

Čestr

This year, you can enjoy a somewhat unconventional take on the traditional goose feast at Čestr. They’ll be serving a quarter of a goose with leavened or potato dumplings, a mix of sauerkraut, and of course hearty goose soup, goose pâté, or goose necks. Ten to fifteen whole geese will be roasted on a spit. Čestr doesn’t take reservations for the goose feast, so be sure to arrive on time!

U Kalendů

You'll find St. Martin’s Day festivities just around the corner at U Kalendů, too. We won’t reveal exactly what the chefs at this restaurant near Prague’s most famous riverfront have prepared for you just yet, but there will be about 80 servings, so we recommend you don’t hesitate and make a reservation in advance.

Skô

The Skô restaurant is also preparing St. Martin’s Day specialties, starting November 11th while supplies last. You can look forward to confit goose leg and fire-roasted goose breast — both served with potato pancakes, red cabbage, and foie gras.

Want to roast a goose at home?

If you prefer a family feast at your own table, just make sure to order a quality goose from a trusted farm in advance:

  • Naše maso Dlouhá: Accepts pre-orders in their online store. You’ll be able to pick up your St. Martin’s Day geese from Chelčice from November 5th.
  • Naše maso at the Holešovice Market: A limited number of geese from Chelčice will be available for purchase on-site starting around November 6th.
  • Biskup: Two packages are available: one with a raw goose, the other with a confit goose. You’ll also find goose soup, dumplings, sauerkraut, and other delicacies that are part of the St. Martin’s Day feast.
