Vanilla Christmas cookies by Pastacaffé

Pastacaffé chef Jirka Bergman bakes vanilla cookies according to his mother's recipe. They are immediately crispy and melt on the tongue!

At Pastacaffé in Vězeňská street, the chefs prepare a vast array of breakfasts, fresh, modern pasta, classic Italian starters and homemade desserts.

You will need:

  • 600 g of plain flour
  • 160 g icing sugar
  • 80 g ground hazelnuts
  • 80 g ground walnuts
  • 400 g butter
  • 2 egg yolks
  • icing sugar with vanilla

Process:

  1. Mix the flour with the sifted sugar, stir in the two types of nuts, the softened butter and the egg yolks. Work the dough and let it rest until the next day.
  2. Preheat the oven to 170 °C and line baking trays with baking paper. Shape the dough into rolls and bake until light golden.
  3. Sprinkle the icing sugar and vanilla on a clean, dry baking sheet and carefully slide the rolls off the baking paper while still warm. Roll them lightly on all sides in the sugar. Done!

Tip: Powdered sugar with vanilla


Place the sugar in an airtight jar and either place a whole vanilla pod inside, or cut it lengthwise and add the scraped-out seeds to the sugar. Seal the jar - and in a few days you have beautifully fragrant homemade vanilla sugar.
