Štangl, La Degustation Bohême Bourgeoise, U Kalendů and sommelier Zdeněk Oudes won awards!

The results were announced yesterday in Mariánské Lázně, and Ambiente restaurants walked away with an impressive set of accolades. Štangl received its very first Michelin star, La Degustation Bohême Bourgeoise successfully defended its star, U Kalendů joined the Bib Gourmand selection, and Zdeněk Oudes of Marie B was awarded the Michelin Sommelier Award.
Štangl—led by chef Martin Štangl—was among the most anticipated contenders of this year’s guide. In addition to its first star, the restaurant also earned a Green Star, a distinction given to restaurants with an exceptional commitment to sustainability.
“It confirms that we’re on the right path, even when it gets tough,” says chef Martin Štangl. “It’s a great honor to stand among such remarkable company.”
Another major success belongs to Marie B, where general manager and sommelier Zdeněk Oudes was recognized by Michelin for outstanding work in the world of wine. “Receiving the Michelin Sommelier Award honestly took me by surprise—I didn’t even know it existed,” Zdeněk says. “I see it as recognition for our entire team and especially for the winemakers, without whom we couldn’t grow. My thanks to all of them.” The restaurant itself appears in the Selected category.
Oldřich Sahajdák, chef patron of both Marie B and the one-star La Degustation Bohême Bourgeoise, adds: “I think the results turned out well. I’m proud of the teams at Haštalská and at Marie B. Ambiente is moving in the right direction, and it’s clear that Štangl and U Kalendů are outstanding without question.”
This year’s Bib Gourmand also went to U Kalendů, a modern Czech pub with its own bakery. Head chef Honza Všetečka comments: “I’m glad our ordinary pub with a bakery made it into such a prestigious guide. I truly value the recognition, and I’m especially pleased that it highlights dishes like pork snouts, duck gizzards and classic Czech soups.”
The 2025 Michelin results confirm Ambiente’s strong position on the Czech gastronomic scene, celebrating the group’s diverse range—from high-end tasting menus to sustainable dining to elevated Czech pub cooking.
Štangl: One Star + Green Star
Štangl, located in Prague’s Karlín district, builds its cuisine around local ingredients from farms and wild landscapes, close cooperation with producers, and a deep appreciation for noble molds and fermentation. Under the leadership of chef Martin Štangl, the kitchen team works with a strong respect for nature and highlights products from small-scale farmers and growers.
La Degustation Bohême Bourgeoise: One Star
Located in the heart of Prague, La Degustation Bohême Bourgeoise offers an immersive tasting experience, presenting modern interpretations of traditional Czech and Central European cuisine with a focus on locality and seasonality.
U Kalendů: Bib Gourmand
At U Kalendů, the team cooks honest Prague dishes, bakes naturally leavened bread in-house, and serves expertly handled Pilsner beer. The kitchen is led by head chef Honza Všetečka, while the bakery is headed by master baker Sláva Grigorik.
Zdeněk Oudes: Sommelier Award
Zdeněk’s love for hospitality started in his teens, when he helped clear tables in a hotel restaurant during a family holiday in Greece. That experience led him to study at the Hotel School in Vršovická and to part-time jobs across various restaurants and hotels—one of which was La Degustation. In his final year, he spent six months interning at the Crowne Plaza in China, where he realized that hospitality was his true calling.
After returning home, he rejoined La Degustation and trained as a sommelier right after graduation. He further sharpened his craft through stages at world-class destinations such as Geranium and Noma, eventually becoming general manager at La Degustation. Today, he serves as both sommelier and general manager at Marie B.
