A Czech regional recipe: Vošouch with sauerkraut from Pilsen

In regional Pilsner cuisine, vošouch is a fried potato pancake to which some cooks like to add smoked meat. We have a recipe for you from Pilsen's Lokal Pod Divadlem and we recommend that you start preparing first sauerkraut.

Right next to the J. K. Tyl theatre in the cultural heart of Pilsen is a meeting place for the entire city. Carefully brewed beer flows, only a few hundred metres from the brewery – stop by and take a seat, or order beer and food straight to your door.
Ingredients for the marinade:
- 2 eggs
- 24 ml whole milk
- 80 g of plain flour
- 2 to 4 cloves of garlic (to taste)
- a pinch of crushed cumin
- 1 teaspoon marjoram
- salt and pepper
- 800 g potatoes
- clarified butter for frying
Procedure:
- Whisk the eggs with the milk, add the crushed garlic, gradually add the flour and finally the spices. Let the marinade rest for a while.
- Wash the potatoes and skin thoroughly and divide into two parts. Finely grate one half and coarsely grate the other. Mix everything with the marinade.
- Form into patties and fry in clarified butter.
Tip: Serve with sauerkraut, which balances well the fattiness of the fried pancakes.
