From fresh vegetables to pre-prepared meat: A shopping list for Biskup farm shop

On Saturday mornings, hundreds of Prague locals head to the farmers’ markets to pick up seasonal fruits and vegetables, dairy products, deli meats, and baked goods. But on Sunday through Friday, when the stalls aren’t open, Biskup is the place to go. A restaurant with a farm-to-table shop where everything they serve is also sold on the shelves. They’re open 7 days a week, so a meaty summer tomato from Svačina farm, or winter carrots grown by Hanka Součková are right at your fingertips. Here's what you''l find there.

Biskup: Lunch, Dinner, Groceries

Somewhere between a snack bar and a restaurant, where once you've finished dining, you can fill your basket with fresh fruit, vegetables and farm produce. A fast pace, small and medium plates, and an open kitchen.
To the restaurant / To the shop

Fresh fruits and veg

“No warehouses, just fields and orchards,” reads the sign in the store window, where several times a week crates of fresh produce are delivered, freshly harvested from Czech fields and orchards. 

Among the store’s suppliers is farmer Hanka Součková from Semice, the Svačina family from Ovčáry, the Prague-based Metro Farm Císařský ostrov, Zdejcina near Beroun, and many other small local farms.

On the stainless-steel shelves, you’ll also find exotic fruits such as pineapples, melons, and citrus fruits, which Biskup sources from Výdejny chuti. The company imports fruit to the Czech Republic that is currently in season and ripens on trees in Greece, the Canary Islands, or Sicily.

Poultry and dairy

Find chicken from Loužná, Rašovice Farm, the Tům family, or Letařovice Farm (known as “Chicken on the Grass”). Here, healthy chickens are raised and allowed to graze, with some farms actually allow their poultry to roam freely outdoors on the grass. The chickens grow at a slower rate and raising them is more expensive, but the result is worth it. You can taste it for yourself at lunch or dinner at Biskup, or take a breast, a thigh, or a whole 2-kilogram chicken home

The butchers at Biskup will be happy to sell you a whole or portioned turkey from Kořínků, or a rabbit from Trnčí. Don’t forget to add free-range eggs, milk, butter, fresh or aged cheese, kefir, yogurt, or burrata from Mozzarellart. 

For breakfast, a party, or as a gift 

Next time you pass by in the morning, remember the fresh baked cardamom rolls or pain au chocolat from Glutentag bakery, and cakes, rolls, and soft bread from Eska

Or, if you happen to walk by in the afternoon, you might find some Pufton’s chips fried in beef tallow, pickled olives, a selection of wine from Winegeek in Holešovice, chocolate from Herůfek, a bag of coffee or tea, or spices from Sonnentor. Any of these would also make a great gift if you’re heading over to someone’s for dinner that evening.

All set — just bake or fry 

Every day, the butchers also prepare fresh semi-prepared dishes for you — in the best sense of the word. The selection rotates between turkey salsiccia, rabbit meatloaf that just needs to be baked, and a mix for liver dumplings for soup, pre-breaded chicken cutlets, and a chicken roll

Or, just stop by for lunch

Or grab one of their sandwiches (egg or chicken tamago sando) or a salad (always containing protein) to take to the park. For an afternoon snack, try the chocolate-covered bananas, sliced fruit, or a fresh fruit smoothie
