Crackling, egg salad, or salami? Prepare your New Year's Eve spreads with Ambiente

Pork scratching, egg, or potato salad are all pleasantly flavoursome and simple to prepare. Here, the chefs from Ambiente share tips on what to spread on your New Year's Eve sandwiches, so you have something to toast with. Want to try something a little spicier this year? Pork scratching spread according to U Kalendů

A classic that goes well with beer, but also with a wine with higher acidity!

Ingredients:

  • 2 kg of pork scratchings
  • 1 kg of Prague ham cracklings
  • 1½ kg of confit pork belly (can also be roasted pork belly)
  • 300 g confit onions
  • 5 tablespoons full-fat mustard
  • 300 g sour cucumbers, grated
  • pickle brine to taste
  • salt and pepper to taste

Procedure:

  1. Grind the scratchings and Prague ham, pork belly and onion in a meat grinder.
  2. Stir in mustard and pickles, season with lime, salt and pepper.

Extra tips:

To create a coarser, more interesting texture, just mash some of the cracklings with a fork. Some recipes also contain lard, which makes spreading easier.

Crackling from Preštice black-pied pigs is available at Naše maso. Sometimes they also have Prague ham crackling or smoked lard.

Egg spread and potato salad from Café Savoy

Can you imagine a sandwich without them? We can't!

Egg spread

Ingredients:

  • 5 eggs
  • 10 tablespoons mayonnaise
  • 1 shallot, finely chopped
  • a few stalks of chives, chopped
  • juice of ½ lemon or lime (or to taste)
  • salt pepper to taste

Procedure:

  1. Boil the eggs in water or steam for 10 minutes. Meanwhile, in a bowl, mix the mayonnaise, shallots and chives with lemon juice and salt.
  2. Peel the boiled eggs, let them cool and then cut them into cubes. Mix everything together, leave in the fridge for an hour - and you're ready to serve!

Potato salad

Ingredients:

  • 10 boiled type A or B potatoes
  • 100 g celery
  • 100 g carrots
  • 5-7 pickled cucumbers
  • 1 white onion
  • 5 eggs
  • 7 tablespoons mayonnaise
  • 4 tablespoons mustard
  • pickle brine to taste
  • salt and pepper for seasoning

Procedure:

  1. Boil the potatoes in their skins and peel them while still warm. Cut the celery and carrots and boil in salted water.
  2. Cut the potatoes into cubes - by hand or with a slicer. Finely chop the cucumber and onion.
  3. Boil the eggs for 10 minutes, then peel and chop them in the same way as the potatoes.
  4. Mix the cooled ingredients with the rest of the ingredients, season with lime, salt and pepper.
  5. Cover the salad bowl with cling film and leave in the fridge, ideally overnight.

Salami mousse by Naše maso

For lovers of salami and light spice.

Ingredients:

  • 1 kg of salami (1 or more types: uherak, hunter, tourist...)
  • 250 g Our mayonnaise
  • 50 ml pickle brine
  • 50 g mustard

To serve:

onion and chives, finely chopped (optional)

Procedure:

  1. Cut the salami into small cubes and finely grind.
  2. Add the mayonnaise to the resulting paste and mix thoroughly. Pour in the brine and work it in so that there is no liquid component in the spread. Add the mustard and mix thoroughly again.
  3. Cover the bowl with cling film and refrigerate, ideally overnight.
  4. Before serving, stir the mixture and make sure the cucumber sauce does not stick to the bottom of the bowl. Taste the spread and season with pepper and salt if necessary.
  5. We recommend serving it with fresh bread. If you wish, you can also sprinkle the onion and chives on the slice with the spread. Enjoy!
