Wine sausage is a traditional part of the Czech Christmas menu. Its twisted shape is meant to resemble the sun, so it is a celebration of the solstice. "The bakers have vánočka at Christmas, we butchers have wine sausage. There have been dozens of recipes since the 19th century. We make it with a combination of fatty and lean pork, white wine, whole milk and a breadcrumbs. The mixture is then stuffed into mutton casings," explains František Kšána.

And what about wine salsiccia? It serves as an interesting variation on the Christmas feast. At Naše maso, it is prepared in a similar way to pork or beef salsiccia. The base consists of meat and lard or suet. In the case of wine salsiccia, it is the pork meat and the lard that complements it, which makes the salsiccia beautifully succulent. Then the spices, salt and white wine are added.
In the recipe, the bun and the milk are missing, and the pork is ground very coarsely which adds bite and texture. The wine salsiccia has a distinctly spicy flavour and smells and tastes of wine. You can roll them up in a spiral and grill them on the pan, or grill them as they are
